These are possibly the most versatile freezer units that one can buy. As a sectional unit, each section can be set to do a different job. One could be a cooler, one a holding freezer, and one a recovery unit or two as holding freezers and one recovery on a typical three section unit. A good example of this is the Koma RKVC-6 unit shown to the left here. Like the other Koma products, these units can safely store dough pieces, confectioners' finished cream or fruit and so on for extended periods and recover at up to +25 C. The RKVC is available from two to five sections, or four to ten doors.
With high-end products, cakes, pastries, and confections, it is also important to recover, or bring back from frozen to fresh, correctly and carefully. Automatically controlled temperature increases, relative humidity adjustment, and exact air flow design results in recovering a properly frozen product to perfection as though it had never been frozen at all.
Temperatures : -28°C/+16°C
