Manufactured by Koma Industries B.V., is the H-Cabinet, also known as the 80/20 system. This unique combination freezer is being used all over the world by some of the most famous Chefs. This cabinet has a blast freeze section which will shock or blast freeze products quickly at -38°C, without skinning, dehydration, ice crystallization, or damage of any kind. Once frozen these products can be moved into the storage sections, where they can remain for extended periods of time, unpackaged and undamaged at -20°C for example. It is important that products are blast frozen quickly and correctly first to preserve their integrity and quality.
The H-Cabinet can be ordered as a stand alone blast freezer, or extended with 2 to 10 storage doors. The modular design allows you to expand the freezer larger as your business grows. It is a leader in its class and does an excellent job with high end products, particularly cakes, pastries, breads and other food products. Quality is insured by the built-in computer system which controls all it's functions with precision and consistency.

KOMA MONOCELL II computer control:
With Koma developed software, The Monocell II computer control regulates all refrigeration processes, including energy consumption to maximize the units performance. Some of its data features and programming possibilites are:
- The number of compressor running hours
- The condition of the refrigeration unit
- One or more doors being open
- Failure reports
- Computer controlled air circulation
- Programmable blast-freezing and storage temperatures and freezing times
- Programmable evaporator defrosting cycles (time controlled)
- Connection to the KOMA TeleGuard remote monitoring system
The cabinets can be supplied in KOMA-white painted steel plate RAL 9002 externally and in stainless teel AISI-304 plate with rounded corners internally, on stainless steel legs 10/15 cm. |
