With the reversible side racks, these models can accommodate either 60cm x 40cm baking pans or 12" x 20" x 1" restaurant pans. The compressor is quieter and more powerful. Freezer Operation: The blast freezing cycle can either be timed or determinated by the core probe when the desired core temperatures are reached. The control can also be set to conservation mode where the freezer stops blast freezing and gently holds the product frozen after it has reached the desired core temperature. This way an operator need not be present to remove the product at the end of a cycle.
In order to prevent damaging ice crystallization, products must be frozen through to the core quickly. This requires the correct freezing temperatures and airflow. Many people purchase the best ingredients in order to make a quality product that they are proud of, but this is easily lost with a slow or incorrect freezing process.
